Holiday Thumb Print Cookies by Vera Smith
1/2 cup shortening
1/4 cup brown sugar
1 egg yolk (save egg white in separate dish)
1/2 tsp. vanilla
1 cup sift flour
1/4 tsp. salt
3/4 cups finely chopped nuts
You favorite jam or jelly
Beat shortening and sugar. Add egg yolk and vanilla. Stir in salt and flour. Place chopped nuts into dish. Place beaten egg white into second dish. Dip cookie balls into egg white and then roll in nuts. Place on ungreased cookie sheet and bake at 350 degrees for five minutes. Remove from oven and lightly press your thumb into center of cookie. Bake another 7-10 minutes. Remove from heat . Cool on rack. With a teaspoon, place a small amount of your favorite jam or jelly into the center of the cookie. Cookies freeze well. makes about 2 dozen.
