Holiday Frosted Pecans by Sally Foster
1/2 cup butter
2 egg whites at room temperature
1 cup light brown sugar
1 pound large whole pecans
Melt butter in 9×13 inch pan in oven. Set aside. Beat egg whites until very stiff, gradually adding sugar until mixture is smooth and thick. Take time to do this so meringue has body. Fold in pecans until they are thoroughly coated. Drop by spoonfuls into the pan with melted butter. bake at 300 degrees for one hour gently turning to separate the nutes using a small spatula. Nuts should be brown and evenly covered with butter. Cool in the pan.
