Ginger Cookies by Elizabeth Swanson
3 cups sifted flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. cloves
2 tablespoons ginger
3/4 cup shortening
3/4 cup margarine
2 cups sugar
2 eggs
1/2 cup light molasses
In a large bowl mix flour with baking soda, cinnamon, cloves and ginger. Set aside. At medium speed mix margarine, shortening and sugar until fluffy. Add eggs and molasses and beat until thoroughly combined. At low speed, gradually add flour mixture. Drop by teaspoon onto ungreased cookie sheet. bake at 375 degrees for 10-12 minutes. Cool on wire rack.
Glaze Topping
2 cups confectioner’s sugar
1 tsp. vanilla
1 tablespoon butter, melted
milk
In large bowl, mix melted butter, vanilla and confectioner’s sugar. Add milk a little at a time. Stir until sugar is smooth and glaze is thin. Brush glaze over cold cookies. Allow to set.
