Italian “S” Cookies by Grandma Grassi or Granny Grassi as we called her.
6 eggs
1/2 stick butter
1 cup sugar
1 cup milk
1 orange rind
3 tsp. baking powder
2 1/2 lbs of flour
Cream butter, sugar and eggs. Add rind, baking powder and milk. Beat until all ingredients are mixed. On a pastry board, make a well with the flour. Gradually, pour the liquid mixture into the center. Knead dough well-it will feel slightly tacky. Pinch off a small amount of dough and roll into ropes. Cut strips and shape into the letter “S”. Bake at 350 degrees on greased cookie sheet until slightly golden brown. Cool on rack.
Glaze
3 cups Confectioner’s sugar
2 tablespoons butter, melted
2 tsp. vanilla
milk
Put sugar into large bowl. Add melted butter and vanilla. Mix in milk until sugar is smooth and thin. You do not want this glaze to be watery so add milk a little at a time. Brush over completely cooled cookies.
NOTE: This recipe has been cut in half. Yes, half! It is an old recipe from my great grandmother who had 8 children.
