Microwave Peanut Brittle by Kay Freeman

3/4 cup peanuts
1 cup sugar
1/2 cup light corn syrup
1 tsp. vanilla
1 tablespoon butter
1 tsp. baking soda

Combine peanuts, sugar and corn syrup into 2 or 2 1/2 quart mixing bowl. Microwave on high for 7 minutes. Add vanilla and butter and microwave again for 2 1/2 minutes. Remove from microwave and stir in baking soda. Work fast. Pour on lightly greased cookie sheet and let cool for 15 minutes. Break up and enjoy!
