Lemon Bars Carole Longhany
2 cups flour
1/2 cup confectioner’s sugar
2 sticks margarine
4 eggs, beaten
2 cups sugar
1/3 cup fresh squeezed lemon juice
1/4 cup flour
1/2 tsp. baking powder
Sift together 2 cups flour and 1/2 cup confectioner’s sugar. Cut in butter until mixture clings together. Press into 9 × 13 inch pan. bake at 350 degrees for 20-25 minutes or until lightly brown.
While crust is baking, beat together eggs, sugar and lemon juice. Add 1/4 cup flour and baking powder. Pour into baked crust and bake for 25 minutes longer. Sprinkle top with additional confectioner’s sugar. Cool and cut into bars.
