Christmas Dinner: Sour Cream Mashed Potatoes by Andrea Simmons

10 medium size potatoes, boiled and peeled
1-8ounce sour cream
3 tablespoons butter
2 tsp. freshly chopped parsley
salt to taste

In large mixing bowl. beat boiled potatoes. Add in sour cream and butter. Whip potatoes until creamy and fluffy.
Stir in parsley. Salt to taste. remove and place in serving dish.
