Christmas Dinner: Orange Carrots by Dina Cassey

2 1/4 cups baby carrots
5 tablespoons butter
1/4 cup brown sugar
1/4 cup fresh orange juice
1/2 cup Mandarin orange pieces
1/4 tsp. salt

Boil carrots until tender. Remove from water. In large bowl combine butter, sugar, juice, orange pieces and salt. Add carrots coating evenly with mixture. Place in buttered baking dish and refrigerate overnight. Turn carrots to coat evenly before baking. Bake at 350 degrees for 20-25 minutes.
