*New Year’s Eve Appetizers: Guacamole Dip" by Janice Rice

4 ripe avocados
1/4 cup onion, finely chopped
1 large tomato, diced
1 tsp. fresh parsley
1 tsp. fresh cilantro
1 tsp. lemon juice

Peel and pit avocados. Mash with fork allowing avocado to stay chunky. In a separate bowl mix onion, cilantro, parsley and lemon juice. Add to avocados. Fold in diced tomatoes. Chill. Serve with tortilla chips.
