*Seven Layer Dip" by Mary Nivens
2 cans refried beans
1 can black olives, sliced
3/4 cup onion, chopped
4 avocados
1 tsp. lemon juice
1-12 ounce sour cream
2 cups cheddar cheese, shredded
3 small tomatoes, diced
Peel and pit avocados. Mash and mix in lemon juice. Set aside. In shallow serving dish layer refried beans, mashed avocado, sour cream, onion, tomatoes, black olives and cheddar cheese. Chill until ready to serve. Serve with tortilla chips.
